BLACK BEAN BROWNIES
These fudgy, delicious brownies are full of fiber and protein to keep you full. You won’t taste the beans at all! Enjoy for breakfast or dessert.
Ingredients + Instructions
Preheat oven to 350
1 15oz can black beans, drained, and rinsed well
¼ cup maple syrup
¼ cup monk fruit sweetener (Use 1/2 cup monk fruit sweetener in place of maple syrup for a sugar free brownie)
¼ cup cocoa powder
⅓ cup melted butter or ghee or coconut oil
1 teaspoon Vanilla extract
½ teaspoon baking powder
¼ teaspoon salt
Blend all of the above in a high powered blender until smooth and then add…
2 eggs
Blend in until combined
Coat a muffin tin with coconut oil or butter
Pour in batter
Optional: top with good quality chocolate chips
Bake for 20-25 minutes
Let cool for 10 minutes and enjoy!
