ELDERBERRY JAM
INGREDIENTS
½ cup dried elderberries
2 ½ cups water
2-tbs honey
3-tsp pectin
1-lemon (juiced)
1-tsp ginger powder
DIRECTIONS
Soak elderberries in water overnight
Bring berries, water, ginger to a boil
Remove from heat and let cool for 2-minutes
Add in pectin 1-tsp at a time mixing very well
Bring back to a low boil and mix well for 10-min
Stir in honey
Let cool and add into mason jars
DOSAGES
If you are taking this for cold / flu prevention or general good health, consume just 1-tsp up to 3x per day, after meals.
If you are sick and want to speed up recovery time, take up to 1-tbs 4x per day after meals.
This jam is safe for children 4 and up. Give them a smaller dose depending on their age, weight and height. E-mail me for customized dosages if needed!
