This recipe is a staple in my house because it quickly livens up any meal and packs in a ton of nutrition.

  • Pesto for quinoa, farro or pasta

  • Spread for toast with avocado

  • Dressing for salad

  • Drizzle on top of roasted veggies

  • Taco topping

  • Dipping sauce for veggies with a side of hummus

INGREDIENTS 

· 1large container basil - washed well, the bottom of stems removed

· 1bunch cilantro - washed well, the bottom of stems removed

· 1bunch parsley - washed well, the bottom of stems removed

· Small handful of carrot tops (optional)

· 1lemon - juiced

· 1-2garlic cloves

· ¼ cup olive oil

· 1tbs balsamic vinegar

· Optional: hemp seeds or pine nuts

· Salt & pepper to taste 

DIRECTIONS

1. Add olive oil, balsamic, garlic, and the juice from one lemon into a Vitamix or food processor

2. Add herbs on tops

3. Blend until liquefied

4. Optional: add hemp seeds or pine nuts to thicken and make pesto-like consistency
